The blade is kept under tension so that is doesnt bend or flex much when it is used so it doesnt need much pressure applied to cut. So, it is perfect for that hard crusty outer French bread with the very soft center. Available in Dark Walnut (dark brown), Black Cherry (red color), Hard Maple (light color). The harps are finished in our special blend of food grade curing seed oils.
